Halliday Wine Companion Whole-bunch pressed with the first 500l (of 700l) retained, wild-fermented in French oak over 10 days, matured for 6 months. The fruit has soaked up the oak to the point of balance, and the wine has outstanding length, the flavours of grapefruit zest and pith encircled by acidity (and residual oak).
